The 2016 vintage was again an earlier than normal harvest due to warmer temperatures and the lack of rain. This yielded smaller yields, and earlier fruit concentration. Hand harvested in the early morning, the cool grapes were pressed whole cluster to tank for cold settling. The juice was then clean racked and fermented cold, with select yeast strains. Then the wine was racked to a portion stainless steel barrels and some carefully selected neutral oak barrels. Wine was aged, sur lie, for a short period before being blended for an early spring bottling.
